Good morning and Happy Easter! Hope everyone is having a nice morning with friends and family. I thought I’d share a little update today on our Whole30 experience.
So we are on day 28 of 30 days with Whole30…sooo close. I ran out of time to post a week 2 update last week so I thought I’d share a week 2 AND a week 3 update with ya’ll.
Last weekend we hosted my mom’s birthday dinner at our house. It was very small and intimate but perfect. Since we were in the smack-dab-middle of Whole30 I was pretty nervous about making dinner.
Should I just make a dish or two that Aaron and I could eat and then make normal dishes for the rest of our guests?
Or do I make the entire dinner Whole30??
After LOTS of research on the Whole30 website and Pinterest…we decided that it wouldn’t be too hard to go ALL Whole30 if we picked some really yummy recipes. SO we did it…(insert wide eyed emoji here.)
Here’s the menu we decided on:
- Skin-on garlic mashed potatoes topped with caramelized onions, toasted pine nuts and bacon
- Oven roasted asparagus
- Simple, veggie filled salad (thank you to my mother-in-law who made an AMAZING Whole30 compliant salad)
- BBQ’ed salmon
- BBQ’ed tri-tip
AND IT WAS BOMB…I was honestly so concerned!! But it turned out so yummy and we successfully tricked all our guests into eating healthy. It opened up a great conversation about replacing your butter with ghee and your milk with full-fat coconut milk, etc. Everyone was shocked at how much they enjoyed the meal even without the milk and butter! Success…

Week 2 and Week 3 Update
A little update here…so we only have a couple days left and I couldn’t be more ready. This has been one of the best experiences I have ever had. I believe it has forever changed the way I eat and the choices I will make from here on out.
BUT all of that to say…I am ready to start introducing the non-compliant items back into my diet so I can figure out this food allergy. Or whatever might have been causing my stomach aches and cramps. I’m dying to just bite into a big piece of bread and see what happens?? Or eat a block of cheese…you know, the basics!
If we’re being honest here…Aaron and I did have ONE glass of wine the other day. If you follow us on social media, Aaron was a part of a Facebook Live on the Lodi Wine’s Facebook page last week (check out the video here). During the live session they tasted Lodi wines who follow the Lodi Rules Sustainable Farming Program. All that to say…he had to. I mean there really wasn’t any way around it. SO because fair is fair…I had to have a glass too, right? haha! I was worried I would feel like a major failure and guilty for my decision but I didn’t. We’re human and we’ve been doing the BEST that we possibly can…we just offered ourselves a little bit of grace. Other than that…we have stuck to this journey 100%.
I am so proud of us for how we have handled the last few weeks. We’ve had to miss out on some fun events but it’s been OK. We survived…
I will do a final recap on our entire experience here in a couple days and maybe get some input from Aaron?? Guest writer on LCN? What do you think, Aar? :)
Thanks to all who have followed along on our journey. It’s been so fun talking to everyone who’s reading the posts, seeing the Snapchats, etc. Well I’ll let you all go. Aaron and I are prepping for Easter at our house today. The lamb is marinating and the roasted potatoes are cooking. Happy Easter to everyone. I hope today is filled with lots of love and gratitude, for our Savior Jesus Christ has RISEN! We have LOTS to celebrate!!
